Christmas Cookie BakingEvery family has one special recipe that they hold near and dear to their hearts. Well, for us that recipe is ‘Holly Lane’s Famous Cookies’. Holly Lane, the matriarch of Diamonds Rock, has been making these delicious cookies longer than I can remember. She gives these cookies as gifts all year round for birthdays and special celebrations, but during the holidays it seems she is a one woman cookie factory! Everyone begs her to make these for them!

We want to pass along some holiday joy by sharing this recipe with you; we promise you will love it as much as we do!

Holly Lane’s Famous Cookies Recipe

Ingredients:

Group A

1 Cup Butter- melted

1 Cup Sugar

1 Cup Brown Sugar

1 Tsp Vanilla

2 Eggs

 

Group B

1 Cup Quaker Quick Oats

1 Cup Cornflakes

 

Group C

2 Cups Flour

1 tsp Baking Soda

1 tsp Baking Powder

½ tsp Salt

 

Group D

1 Cup Chocolate Chips

1 Bag Heath Pieces

½ Cup Raisins

½ Cup Dried Cherries

½ Cup  Sweetened Shredded Coconut Flakes

 

Directions:

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a large bowl, hand mix the ingredients in Group A.
  3. Add each ingredient from Group B one at a time (very important!) to your bowl.
  4. Add each ingredient from Group C one at a time to your bowl. Make sure to only add 1 cup of flower at a time!
  5. Add each ingredient from Group D to your bowl. Mix very well!
  6. Roll the dough into walnut sized balls.
  7. Place cookies 2 inches apart onto ungreased cookie sheets and flatten slightly.
  8. Bake in the preheated oven for 12 to 16 minutes or until golden brown.*

*Special Note: For a truly authentic batch of Holly Lane’s Famous Cookies, she uses a baking stone, and preheats the oven and the baking stone before putting the cookies in to bake.

  1. Let cookies cook, then ENJOY!!!

Yields: 32 large cookies

When I look back on a childhood of baking these cookies with my mother, I fondly remember helping her pour the ingredients, begging to lick the bowl, and burning my little fingers when I tried to pull one off the baking pan. Now, it is my own daughter who is helping her MiMi pour the same ingredients into the same bowl and licking the same spoons! J
